2 medium zucchinis, grated

Instructions

Grate the zucchinis and place them in a colander. Sprinkle with 1/2 tsp salt and let sit for 10 minutes.

Squeeze out as much moisture as possible using a clean towel or cheesecloth.

In a bowl, beat the eggs. Add zucchini, flour, Parmesan, green onions, garlic, baking powder, salt, and pepper. Mix well.

Heat oil in a nonstick skillet over medium heat. Scoop 2–3 tablespoons of batter per fritter into the pan and flatten slightly.
