Ingredients

  • 2 medium zucchinis, grated

  • 1/2 teaspoon salt (for draining zucchini)

  • 2 large eggs

  • 1/3 cup all-purpose flour (or almond flour for gluten-free)

  • 1/4 cup grated Parmesan cheese

  • 2 green onions, finely chopped

  • 1 clove garlic, minced

  • Salt and pepper, to taste

  • 1/4 teaspoon baking powder (optional, for extra fluffiness)

  • Olive oil or neutral oil, for frying


Instructions

  1. Grate the zucchinis and place them in a colander. Sprinkle with 1/2 tsp salt and let sit for 10 minutes.

  2. Squeeze out as much moisture as possible using a clean towel or cheesecloth.

  3. In a bowl, beat the eggs. Add zucchini, flour, Parmesan, green onions, garlic, baking powder, salt, and pepper. Mix well.

  4. Heat oil in a nonstick skillet over medium heat. Scoop 2–3 tablespoons of batter per fritter into the pan and flatten slightly.

  5. Cook each side for 2–3 minutes until golden brown and crispy.

  6. Transfer to a paper towel-lined plate to drain excess oil.

  7. Serve warm with your favorite dip or a squeeze of lemon.
